Our Story
Roots Chicken Shak is the first concept from T2D Concepts, founded by Chef Tiffany Derry and Tom Foley
T2D is a purpose driven-hospitality group - delivering great food, great service, great conversation, and great impact.

In 2024, Tom & Tiffany franchised Shak to bring duck-fat fried chicken to more fried chicken lovers and to drive opportunity for others to join the T2D team.
​
Tiffany and Tom strive to ensure everyone is invited to the table and has equal opportunity to thrive. Grounded in strategic business analysis, the pair developed this innovative operations and strategic model to expand the Roots footprint, deliver consistent chef-driven food, and provide incentives and opportunities for under-resourced community members to own their own franchise.

November 2017
Tiffany & Tom – the two “Ts” in T2D Concepts, launch Roots Chicken Shak, with a 329 square foot kitchen at Legacy Hall, Plano, TX
March 2020
Construction on Roots Southern Table – the full-service restaurant set to serve our famous Duck-Fat Fried Chicken – is ready to begin construction, but the world wasn’t ready. Instead, with COVID striking, Tiffany & Tom embrace the word of that year – pivot – and begin serving family meals – curbside – to continue to join people together around the table
June 2021
Roots Southern Table opens to national acclaim, recognized as a James Beard Finalist for Best New Restaurant in the country along with the New York Times highlighting Southern Table as one of 50 restaurants

2023
A year of strategy and paperwork, Tom & Tiffany were busy behind the scenes, from designing a unique franchise model empowering ownership for under-resourced community members to crossing
the “Ts” on the franchise documents.
April 2024
Corey and Marian Epperson officially sign as Roots Chicken Shak’s first franchisee
December 2025
After months of focus identifying, designing, and constructing the first franchise location, Corey, Marian, and T2D celebrate the opening of the first franchise

January 2019
After a little over a year of successful operation, T2D Concepts decides that maybe it’s time to expand Roots Chicken Shak. Later in 2019, T2D begins conversations with H-E-B to add a Roots to H-E-B's Austin food hall
August – September 2020
Our second Roots Chicken Shak opens at Mainstreat Food Hall in Austin TX and the hammers start to swing on Roots Southern Table’s build-out
December 2022
As the year ended, Tom & Tiffany sketched the goals for 2023 - franchising Roots Chicken Shak to create opportunity for others to own their own restaurant
February 2024
Tom represents Roots Chicken Shak at its first franchise show in Dallas TX.
October 2024
Robert and Tamika Barkers sign as Roots Chicken Shak’s second franchisee
