Duck Fat Fried Chicken

Roots Chicken Shak’s menu may seem simple, but it is far from boring!

We fry our chicken in duck fat, giving our wings and sandwiches a crisp batter that has the right crunch and super tender meat.

​

Add in some proprietary All Purpose Creole seasoning and guests are met with a flavor profile fit for fine dining!

Need proof? The fried chicken has been adopted by our sister restaurant, Roots Southern Table, a casual fine dining restaurant in Farmers Branch, Texas and has been recognized as Dallas’ best fried chicken.

Additionally, we have served our duck fat fried chicken at the White House. TWICE!

Our Story

Roots Chicken Shak is the first concept from T2D Concepts. T2D Concepts, founded by Chef Tiffany Derry and Tom Foley, is a purpose driven-hospitality group - delivering great food, great service, great conversation, and great impact.

​

In 2024, Tom & Tiffany franchised Shak to bring duck-fat fried chicken to more fried chicken lovers and to drive opportunity for others to join the T2D team.

​

Tiffany and Tom strive to ensure everyone is invited to the table and has equal opportunity to thrive. Grounded in strategic business analysis, the pair developed this innovative operations and strategic model to expand the Roots footprint, deliver consistent chef-driven food, and provide incentives and opportunities for under-resourced community members to own their own franchise. With an efficient footprint, streamlined menu, elimination of food waste, and prioritization of creating opportunity for minority ownership, Roots presents a scalable restaurant concept that creates a great dining experience and catalyzes social justice.

Our Journey

From a single food stall to a movement.

2017/Nov.

Launch of Roots Chicken Shak at Legacy Hall. Tiffany and Tom partner to introduce Chef’s famous duck fat fried chicken served twice at White House!

2019/Jan.

After a successful year of operation Roots Chicken Shak, Tiffany and Tom decide it is time to expand Roots Chicken Shak.

2020/Aug.

The second Roots Chicken Shak debuts in Austin, Texas at H-E-B Main Street Food Hall; inviting a new experience for H-E-B customers when visiting Mueller District.

2022/Apr.

Seasoning Launch in H-E-B.

Expanding Roots Chicken Shak.

2019/Sep.

After considering many opportunities, Tiffany and Tom commit to partnering with H-E-B to opening Roots Chicken Shak’s second location.

2020/Mar.

Time to help our community. Faced with economic challenges due to the pandemic, Roots introduces family meals. Chef Tiffany’s way to bring comfort.

2021/Jun.

Opening roots Southern Table to national acclaim.

2021/Mar.

Winter storms sweep through Texas leaving many without power and water. The team at Roots rallied to serve hot meals to thousands in need.
